Potato Salad Recipe


•8 to 10 medium Potatos
•2 to 3 Celery stalks
•1 small Onion
•4 hard-boiled Eggs
•1 to 1 1/4 cups Mayonnaise
•1 to 2 tbl. prepared Mustard
•1/2 cup Sweet Pickle Relish
•Salt, Pepper, Paprika

Total Time 30 min.
Directions:Cut potatos into ¾ inch cubes • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes; drain. Let Cool.• Slice Celery thinly & dice Onions and Eggs.• Place Potatos, Celery, Onion and Eggs in large serving bowl. • Stir in Mayo, Mustard & Relish. Salt and Pepper to Taste.• Sprinkle with Paprika

Other indregients often added are minced garlic, celery or dill seed. One excellent Southern Cook prepares his Potato Salad with Yogurt in place of Mayo (adding a dash or 3 of Vinegar). Some swear by Miracle whip...Me I prefer Dukes Mayonnaise, a Southern speciality.





Macaroni Salad Recipe


•1 lb. Elbow Macaroni
•1 cup grated Carrots
•1 cup thinly sliced Celery
Dressing
•1 cup Mayonnaise
•1/3 cup refined Sugar
•1 tbl prepared Mustard
•1 tbl Cider Vinegar

Total Time 20 min.
Directions:Cook Macaroni per instructions. Rinse with cold water, drain and let cool. • Mix all dressing ingredients thoroughly. • Toss Macaroni, Celery and Carrots. Mix in Dressing. • Refrigerate for several hours.

Add a cup of any one of the following for a slightly different variation: diced Ham, grated cheddar cheese, cooked sweet peas.


Carrot Raisin Salad Recipe


•6 Cups grated Carrots
•1 Cup Raisins
•2/3 Cup Mayonnaise
•1 Tbl Wine Vinegar
•2 tsp Sugar
•Salt ∓ Pepper to taste

Total Time 20 min.
Directions:Mix Carrots and Raisins • Mix remaining ingredients and toss evenly into carrots and raisins.• Refrigerate for several hours.• Note: Try including Sour Cream or Yogurt in with the Mayo (still 2/3 cup though) for a slight taste variation!

This is the basic recipe, good add-ins include: sunflower seeds,chopped pecans or other nuts, peanuts,pineapple tidbits, chopped crisp apples (Granny Smith or Fuji)and shredded sharp cheddar cheese.

Broccoli Salad Recipe



•2-3 heads Broccoli
•2-3 bunches Green Onions
•8 oz. shredded Shredded Cheddar Cheese
•1/2 cup Bacon Bits
•1 cup Mayonnaise
•1/4 cup Cider Vinegar
•1/4 cup Sugar
•Salt & Pepper to Taste

Total Time 15 min.

Directions:Cut Broccoli into bite sized pieces. • Combine Broccoli, Onions, Cheese and Bacon bits in a large bowl and mix well. • Wisk together other ingredients and stir into salad at least 45 mins before serving. • Keep refrigerated until ready to serve.
