Stewed Tomatoes & Okra


•2 cups Stewed Tomatoes
**See Sidebar
•2 cups Okra 1/2 inch slices
•1 medium Onion Chopped
•Salt & Pepper
•1 tbl Vegetable Oil

Total Time 30 min.

Directions:Heat oil (medium high) in large skillet and add onions. Cook until onions are lightly browned. • Stir in Okra, Stewed Tomatoes, Salt and Pepper and cook for about 10 minutes , stirring occasionally.• Reduce heat to low and let stew for 10 to 20 minutes.

Stewed Tomatoes & Okra may be served over Rice or as a side dish. Variations: Use Bacon Grease. Fry up a few slices of smoked bacon, drain off most of the grease and you're there. Sprinkle with Bacon Chips before serving.




TJ's Browned Squash

Total Time 30 min.
•3-4 Medium Yellow Squash
Sliced thin - Enough to overfill pan uncooked
•2-3 Tbl Butter
•Plenty of Black Pepper

Directions: In large Frying Pan melt 1 tbl butter over high heat. • Add half of the Squash and 1/2 tsp black pepper and toss occasionally until well browned and reduced. • Add remainder of Squash, pepper and butter and continue until all is browned. • Reduce heat and simmer until serving.

A favorite Summer Vegetable Recipe around our house when I was a kid, we used to call it Burnt Squash. The secrets of TJ's Browned Squash are the high heat (you really want it to brown) and liberal use of Black Pepper. Overuse of butter takes away from the flavor. Variations: Add a small sliced onion, a little butter and saute in pan over medium heat until slightly softened prior turning up heat and adding squash.


QUICK GREEN BEANS


•1 smoked Ham Hock
•1 medium Sweet Onion, sliced
•1 lb Green Beans
•Salt & Black Pepper to taste

Total Time 3 hours

(OK it's not that quick! But it doesn't take but a few minutes of your time. Just check every now and again and make sure the pot doesn't scorch.)
Directions: Boil ham hock in water for about 2 hours. (Go on about your business) • Wash green beans thoroughly in cold water. • Add Green Beans, Onion and seasoning and continue cooking over slow boil at least 30 minutes. Variations: Add a few small New Potatos about 20 minutes before serving.

**Stewed Tomato Stock



Stewed Tomatoes are such a common ingredient in Southern Cooking it's a good idea to always have some available. The summer, when Tomatoes are plentiful, is a good time to stew up a large pot of Tomatoes and can or freeze for year-round use.

Directions: You'll need two pots on the stove and a large bowl of iced water near by.
Bring a large pot of water to a full boil. • Parboil Tomatoes for 2-3 minutes. • Remove and cool down in a bowl of iced water for a couple of minutes. • Slice off stem end and remove skin. (If the skin doesn't simply fall off it wasn't parboiled long enough) • Add skinned Tomatoes to pot over medium heat. • Repeat process till all Tomatoes are stewing. • You'll want to roughly stir the stewing Tomatoes until you've reached the desired consistency. • Simmer over low heat for at least 1/2 hour.
